Production Technique:
Harvesting: The grapes are hand harvested when they are fully ripe.
Vinification: They must macerate in their skin for approximately 18/24 hours at a low temperature in order to maintain their exceptional fragrance. They then go through a cold
fermentation process in steel tanks for approximately 12-18 days. The wine refines in stainless
steel tanks for a further 6 months, followed by 1 month in the bottle.
