Typically Mediterranean, characterised by rainfall ranging from medium to high concentrated especially in the month of November. Especially dry with little to no rainfall in the month of July..Temperatures -0 degrees C° in Winter.

Production technique:
Harvesting: The grapes are hand harvested between September 15 and October 15.
Vinification:The grapes are then gently pressed at a low temperature in order to keep their exceptional fragrance. They are 70% fermented through a cold fermentation process for about 12-18 days followed by 30% fermentation in oak barrels, each containing 225 litres for 6 months.
This is followed by a further 3 months in the bottle.

Organoleptic characteristics:
Colour: Yellow with golden reflection
Bouquet: Flowery, and fresh with a light scent of vanilla
Flavour: Dry, with a slightly bitter after taste and vanilla.

Alcohol content: 14%

Serving suggestions: Excellent as an aperitif with fish appetizers and also with fish dishes containing saffron and truffle, rabbit, fresh cheeses, ricotta and caprino with herbs
