Production technique:
Harvesting: The grapes are hand harvested between September 15 and October 15,
Vinifcation: The grapes are then gently pressed at a low temperature in order to maintain their
exceptional fragrance . They are then fermented in stainless steel tanks using a cold
fermentation process for about 12-18 days. The wine continues to refine in stainless steel for 6 months, followed by 1 month in the bottle.

Organoleptic characteristics:
Colour: Straw-coloured with strong greenish reflection
Bouquet: Intensive smell of mineral scents, white flowers and fruits. Also of green apple, peach and jasmine, with an almond after taste..
Flavour: Fresh and crisp and delicate on the palate with a strong mineral touch.

Alcohol content: 13%

Serving suggestions:E xcellents an aperitif with fish appetizers and also with fish dishes containing saffron and truffle, rabbit, fresh cheeses, ricotta and caprino with herbs.
