Production technique:
Harvesting`;The grapes are hand harvested between September 15 and October 15.
Vinification: The grapes are pressed at a low temperature in order to keep their
exceptional fragrance . They are then subject to a cold fermentation process for 12-18 days. The wine refines in stainless steel tanks for 6 months, followed by 1 month in the bottle.

Organoleptic characteristics:
Colour: Straw-coloured with strong greenish reflection
Bouquet: Intensive mineral scents, white flowers and fruits.
Flavour: Fresh and crisp. The palate is delicate with a strong mineral touch.

Alcohol content: 13%

Serving temperature: 11/13 degrees C°

Serving suggestions: Excellent as an aperitif. Particularly good with fish appetisers, fish dishes with saffron and truffle, and oven baked rabbit. Also with fresh cheeses, ricotta ad caprino with herbs.
